Tomatillo Green Goddess Dressing
Want a refresher on how to make this?
Makes 1 1/2 cups
INGREDIENTS
1/2 cup packed fresh herb leaves (I like dill, cilantro tarragon and parsley but any mix will do!)
1 large tomatillo, roughly chopped
3-4 slices of jalapeño
1 clove garlic, smashed
zest of 1/2 lemon
juice of 1 lemon
1 cup greek yogurt
1/2 cup mayonnaise
1 tablespoon dijon
1 tablespoon red wine vinegar
2 tablespoons olive oil
salt and pepper to taste
INSTRUCTIONS
Place all ingredients into a small blender and blend until smooth. If you want a super smooth dressing, you can pass it through a fine mesh strainer.
Check the dressing for seasonings and adjust with more salt or pepper if needed.
Keep covered in the fridge for up to a week!
Chef’s Tip: add an anchovy or two for more salty umami flavor!
