Tomatillo Green Goddess Dressing

Makes 1 1/2 cups

INGREDIENTS

  • 1/2 cup packed fresh herb leaves (I like dill, cilantro tarragon and parsley but any mix will do!)

  • 1 large tomatillo, roughly chopped

  • 3-4 slices of jalapeño

  • 1 clove garlic, smashed

  • zest of 1/2 lemon

  • juice of 1 lemon

  • 1 cup greek yogurt

  • 1/2 cup mayonnaise

  • 1 tablespoon dijon

  • 1 tablespoon red wine vinegar

  • 2 tablespoons olive oil

  • salt and pepper to taste

INSTRUCTIONS

Place all ingredients into a small blender and blend until smooth. If you want a super smooth dressing, you can pass it through a fine mesh strainer.

Check the dressing for seasonings and adjust with more salt or pepper if needed.

Keep covered in the fridge for up to a week!

Chef’s Tip: add an anchovy or two for more salty umami flavor!
