Makes about 6 cups

INGREDIENTS

  • 3 cups oat

  • 1 c sliced almonds

  • 1/3 cup pumpkin seed

  • 1/4 cup chia seeds

  • 1/4 cup flax seeds

  • 1/3 cup sunflower seeds

  • 1/4 c brown sugar

  • 2 tablespoons honey

  • 1/4 cup coconut oil

  • 1 teaspoon salt

  • 8 ounces dry blueberry

  • Zest from 1 lemon


INSTRUCTIONS

Preheat your oven to 325*F and line a baking tray with parchment paper.

Mix everything except the lemon zest and dry blueberries in a large bowl and stir well to coat everything evenly.

Spread the mixture on your prepared tray and bake for about 15-20 minutes, until the mixture is super fragrant and all the oats and nuts have taken on a nice deep and evenly golden color. I like to mix it every 5 minutes or so to ensure even baking

Remove and allow to cool slightly before zesting the lemon on top and stirring in the dry blueberries.

Cool completely before storing in an airtight container for up to a week or in the freezer for up to a month.
