Spicy Herby Nectarine Sauce

Makes about 1 1/2 cups

INGREDIENTS

Mushies

  • 1 large nectarine, diced small

  • 1 fresno or jalapeno pepper, minced

  • juice and zest of 1 lime

  • 3/4 cup olive oil

  • 1/2 cup finely chopped mixed herbs (I like mint, parsley and thyme)

  • kosher salt and fresh cracked black pepper to taste

INSTRUCTIONS

Mix all ingredients in a small bowl and stir to combine, careful not to break up the nectarine at all. Check the seasonings and adjust as needed with more salt and pepper.

Keep in an air tight container in the ridge for up to a week.
